My favorite vegan dinner ideas

Macaroni & 'Cheese'
Blend:
1 lb. Extra-firm Tofu
1 Tsp Minced Garlic
1 Tbsp Mustard
1/2 Tsp Paprika
1/4 Cup Nutritional Yeast
1/2 Tsp Turmeric
1/2 Cup of water
Salt & Pepper to taste

Add to 3 Cups cooked pasta
Squash boats
1 Spaghetti Squash (Cut in half, coat in olive oil, cook upside down, 400 degrees for 40 mins)
To a bowl add:
1/2 Onion, diced
1 Bell Pepper, diced
1 Cup Black Beans
1/2 Tsp chili powder
1/4 Tsp Pepper
3/4 Cup Salsa Verde
1/2 Cup Corn
Top with:
1 Cup Vegan cheese
1/2 Avocado, diced
Once the spaghetti squash is cooked, use a fork to shred creating ‘noodles’, then add ingredients


Mushroom tacos
2 Tsps Minced Garlic
1/2 Onion, chopped
5 Oyster Mushrooms, shredded with fork
1 Tsp Paprika
1/4 Tsp Salt
1 Tsp Garlic Powder
1/4 Cup BBQ Sauce
Sprinkle of Cilantro
Cook until soft
Add to tortilla of choice
Crispy tofu nuggets
To a bowl add:
3 Tbsp Olive Oil
2 Tbsp Soy Sauce
1/3 Cup Nutritional Yeast
1/2 Tsp Garlic Powder
1/2 Tsp Onion Powder

1. 2 Lbs Extra-firm Tofu (Cut into “chicken nugget like” pieces)
2. Mix tofu into ingredients until evenly coated
3. Spread on baking sheet
4. Cook at 400 degrees for 30 minutes


Cauliflower steak pizza
1 Head of Cauliflower
2 Tbsp Avocado Oil
1 Tbsp Oregano
1/4 Tsp Garlic Powder
1/2 Cup Marinana/Pizza Sauce
1 Cup Dairy-free Shredded Cheese
Pizza Toppings of your choice
Salt & Pepper to taste
1. Wash & cut cauliflower into ‘steak’ like pieces
Place ‘steaks’ onto a baking sheet
2. Drizzle 'steaks' with oil, sprinkle with salt, pepper, oregano & garlic powder
3. At 400 Degrees cook for 20-25 minutes
4. Top with sauce, cheese & pizza toppings
5. Broil for 5 minutes or until cheese is melted
